Mama(n)datory

Living motherhood fearlessly

As the title suggest, I know you'd go "Brownies? Easy!" I'm sure if you type into Google for a recipe, there are thousands of brownie options - some are the same classic ones, whilst some with a twisted version of brownies. So which one would you choose?

I've experimented with various brownie recipes too but this particular one is the one I always go back to. The classic.

INGREDIENTS

175g butter *
125g dark chocolate, chopped *
125g dark chocolate, chopped (for molten)
1 1/2 cups sugar
3 large eggs
1 teaspoon pure vanilla extract
1/4 cup cocoa powder
3/4 cup flour
1 teaspoon salt

*to be melted

METHOD

Step 1
Preheat oven to 180c. Grease a 20cm square cake pan (or you could line it with a baking paper - which I don't currently have at home - for easier lift-out of the finished brownies.

Step 2
Place butter* and 1/2 of the chopped chocolate* into a microwave-safe bowl. Melt in 30 seconds increment, whisking after each, until completely smooth. (Or you could even do the double-boil process if you prefer it that way)

Step 3
Whisk in the sugar while the melted butter+chocolate is still warm, until combined. Then whisk in the eggs and vanilla.

Step 4
Add the cocoa powder, flour, salt and the remaining 1/2 of the chopped chocolate. Fold everything together with a spatula. Batter will be very thick which represent the fudgy-ness. Spread evenly into pan.

Step 5
Bake for 25-30minutes. Once done, remove from the oven and completely cool it on the wire rack before cutting into squares.

It didn't have much crackly top this time, Mayesa took her time whisking in the sugar into the no-longer-warm melted butter and chocolate

BROWNIE POINTS

  • Whisking in sugar while the melted butter and chocolate is still warm, creates a shiny and crackly top.
  • Flour gives the brownie structure. Too much flour will make the brownie goes into the cakey zone, which we do not want.
  • Folding in some chopped chocolates into the batter creates pockets of molten, which I like!
  • To tell if the brownies are done, insert toothpick in the middle, and pull it out. If the toothpick comes out wet, the brownie's not done. Re-check every 2 minutes. The brownie is done if the toothpick comes out with few moist crumbs. You don't want a clean toothpick!

Have a go at it! and tell me how it turns out!

Rugi siapa yang tak suka makan ni.
Nampak pucat, sebab gula dekat bawah.
This isn't my first time making sago gula melaka, but it's definitely the first time sago jadi cantik sebutir-sebutir macam ni.

Noob.

I've finally corrected my method untuk dapatkan kejadian biji sago tu cantik macam tu. Tips dia..bawah resepi ni:

Bahan-bahan (2-3 serving):
200g Biji sago
1 ketul Gula melaka
100ml Santan
Garam
Cara-cara:
  • Sago
  1. Rebus biji sago.
  2. Dah agak jernih biji sago, tos kan.
  • Air gula
  1. Larutkan gula melaka dengan sedikit air atas api kecil.
  • Santan
  1. Masak pati santan dengan sedikit garam atas api kecil.
  2. Tambah sedikit air kalau terlalu pekat.

Confirm biji sago jadi butir cantik!

Senang kan? Try it!

Who doesn't love kuih talam?
...my husband.

For real, dude. He's a cake guy (or any orang putih punya dessert) and never a kuih/bubur pengat kind-of-guy. Mayesa follows suit.

I, on the other hand, loveeeeee kuih and pengat. So does my second-born, Sofia.
So whenever I feel like having some, I'd buy few pieces(which does not taste good-some of it-compare to it's price) or I just whip up some on my own.

People might think it is hard work, and I used to think the same too. Tapi percayalah, once you start doing one, you'd be doing more. Tak susah, trust me.

Today, I made kuih seri muka enough for our family of 4 (although only Sofia and I will be eating it, and maybe Mayesa will have some of just the glutinous rice base). A simple and quick do, by only using the rice cooker.

I did not take a step-by-step picture, but here's the recipe that I used if you'd like to give it a try.
*This is a quick recipe, hence the easy-ingredients. By all means if you have the time and want a nicer pandan taste/color, you may use the original air perahan pandan and ignore the kaya spread & coloring*

For the base:
1 cawan beras pulut
1 cawan santan
Garam secukup rasa

For the top (custard-like):
1 cawan santan
2 sudu besar kaya spread
2 sudu besar tepung
1 biji telur
Garam
Titis pewarna

Method:
1. Basuh beras pulut sampai bersih.
2. Masukkan santan dan garam. Masak dalam rice cooker sehingga pulut lembut. (Boleh tambah air sikit kalau agak-agak santan dah kering tapi pulut tak cukup masak).
(I only use a 5 or was it 6inch loyang je for this recipe).
4. Using just a blender, sebatikan bahan-bahan untuk lapisan custard.
6. Kukus lebih kurang 20-30minit dalam rice cooker. Siap!

Easy peasy.
Try it.

Today I made it in PINK!
